Protein Packed Lettuce Wraps

*This is gluten and dairy free*

I've been wanting to install a lifestyle segment to my blog for a while and now I finally am! I thought what better way to start it off with a food post? I am not a chef, or really know anything about cooking. But! I really enjoy making healthy food on a budget so I thought, why not share? Also, why is it so freaking hard to photograph food? It's an art within itself. 


What I used: Romain Lettuce, chicken thighs, quinua, carrots, mustard, avocado, almonds, salt, pepper

How I made it: All I did was cook up a half a cup of quinua in a rice cooker while boiling two chicken thighs. Once the thighs were done, I ground them up in my new food processor (you could also shred the chicken), added a small handful of almonds and about a tablespoon of mustard. Then I added a little salt and pepper, some leftover guacamole (it would have been better to used sliced avocado, but I used what I had) and shredded carrots for an extra veggie. Then just placed a big spoonful of quinua and a big spoonful of ground chicken onto two pieces of washed romaine lettuce, wrapped it up like a burrito and, viola! A protein packed lettuce wrap. Seriously guys, after eating two of these, I am so full. 

Hope you guys like! I have been super into making easy healthy food. It all started once I finally moved into my own apartment after living at home during high school and then in the dorms. I found that once I lived on my own it was much easier to stay healthier by making my own food, and I actually lost around 10-15 pounds. 

Again, I've never taken a cooking class, and don't consider myself even to be a food connoisseur. I'm just a college girl who really enjoys making and eating food! So most likely, every food post on here will be incredibly simple, no insider secrets or professional tools/ expertise needed. Unless of course, I am posting a recipe by someone else for inspiration or what-not. 

Tell me if a food/lifestyle installment on this blog is something that you'd like to see and/or follow. Well honestly, even if the answer is no, I will probably keep doing it! My other ideas for this new segment are things like decor, organizing, more food, anything I find that doesn't fit into fashion.
